Spinach with Poached Eggs

bag of spinach
zest of a lemon
pinch of salt
2 large eggs

Poach your two eggs.

Wash the spinach and shake to remove excess water. Then place the spinach in a large pot, sprinkle with lemon zest and salt, and cover with a lid on the stove over medium-high heat for 10 minutes. Shake the pot at least once during the ten minutes so that the spinach wilts properly. When wilted, dump the spinach out onto a plate. Place the two eggs on top of the spinach, and serve.
