recipe from “The Biscuit Basket Lady,” the cookbook from which my family has been making its fabulous biscuits for many years
* This recipe is a gem! It has a slight bit of sweetness without being over the top and you almost always have the ingredients onhand. I make it often for lunch since it’s got a healthy dose of dairy and the best part is that it literally takes 5 minutes to throw together.
makes 4 servings (2 if you’re eating it for lunch)
2 cups cottage cheese
½ cup unbleeched all-purpose flour
2 tablespoons sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
pinch of baking soda
Preheat oven to 350°F. Grease a 1-quart casserole.
In a bowl, combine the cottage cheese, eggs, flour, sugar, cinnamon, salt, and baking soda (all the ingredients). Pour the mixture into the casserole and bake for 20 minutes.
Raise the heat to 425°F and bake 15 to 20 mintues longer. The casserole should be brown on top and should not wiggle. Test it by inserting a knife in the middle. When you press the knife gently to one side, the casserole should be set – no longer liquid – the consistency of baked custard.
